We are a private Club and have a spectacular clubhouse with a breathtaking view of a lake. We are a full service club with an award winning culinary and service staff that specializes in private events. I would like to invite you to come and see why we are the preferred banquet facility for all of the northeastern Charlotte metro area.
Mark
Mark’s first job, as a 14 year old, was at the one country club in his hometown of Keokuk, Iowa, as a pro shop attendant.
Since leaving Iowa to attend college in New York City, he has worked in numerous food and beverage positions. He, in fact, met his wife at a restaurant in NYC where they both worked.
In 2002 they moved with their 2 year old son to Savannah, Ga, where he worked for a hotel group, North Point Hospitality, as a food and beverage manager at 4 of their 5 hotels. His first year at the DoubleTree Hotel he was named employee of the year. He then helped the company open their next four hotels.
He is excited to be working with Chef Kris Dietrick, at one of the premiere clubs in the Charlotte area and being able to get out on the beautiful course on occasion.

In looking back at my love of food I realize now that it began at an early age while watching my grandfather prepare his chicken soup for the family. Living in a small town in Ohio, he would start his process on Friday and the soup would be ready on Sunday to feed his 10 brothers and sisters, spouses and children. At the time I thought it was just soup, but I now realize the passion and pride that went into his soup and the satisfaction he gained by preparing something that everyone enjoyed. When I was in the fourth grade my family moved to North Carolina and our neighbor had a catering business. With a van and two trailer cookers he would stay up all night cooking,basting and flipping pork into some of the best barbeque that I have ever eaten. His son was my best friend and we worked with his dad unloading,serving and cleaning up after the events which was a pretty good job for two 11 year olds.
I realized that he had the same passion with his barbeque as my granddad had with his soup. His catering business ultimately grew into a restaurant and there I set tables and he let me cook a little.
As an Executive Chef, here in Charlotte, for the last 12 years I have been responsible for all aspects of food management, preparation, presentation, and, most importantly, giving my customers a memorable dining experience. It is with this prior knowledge, training, mistakes made, and accomplishments along the way, that I feel excited to take my skills to a new level at Irish Creek. Succeeding here will be accomplished by my prior experiences, but will always be influenced by the passion and pride that my grandfather and neighbor instilled in me at an early age.
